Brewed up, it is balanced and full-bodied, bursting with chocolate, cashew, and citrus sweetness. Currently, your coffee Epiphany is made up of 40-percent Guatemala Limonar and 60-percent Brazil Serra.
BREWING
For espresso, we suggest 20g coffee per 30g liquid weight. 199 degrees F. All brewing methods will do the trick.

Irving Farm Coffee - Blackstrap Espresso Blend
In Italy, an espresso is defined by 4 things, sometimes referred to as the "4 M"s: Machina, Mano, Macinazione and Miscela. In English these translate to Machine, Hand, Grinder and Blend. This blend, named for the viscous sweetness we've achieved, is a twist on a traditional Italian espresso blend, and we find it comes vividly to life when applied to the Macinazione, Mano and Machina. Soft, sweet Brazilian coffee serves as the base and gives the espresso its rich, velvety, heavy mouth-feel. We use the Latin American to add complexity and just a touch of acidity to keep it lively on the palate. Finally, the Yirgacheffe is added for sweetness and citric aromatics. We love the way this espresso dances with layers of aromas and flavors, all announcing themselves in the thick viscous crema. Blackstrap is especially well suited to traditional combinations with milk, whether you prefer a small, more coffee-focused cappuccino, or the the sweeter, creamier cafe latte.

Topeca Coffee - El Salvador Signature Espresso
It is very uncommon to find an espresso blend made from coffees of one single origin, but since we have access to 2 farms at different elevations, and the ability to process our coffee many different ways, we are able to create an incredibly balanced blend with coffees from just one region. Natural processed bourbon from the Ayutepeque farm gives this blend an intense fruit sweetness and syrupy body, while its washed component comes in with chocolate, nut, and cedar tones. A touch of SHG altitude bourbon from El Manzano rounds everything out with bright floral spice. A great espresso to feature on its own, un-transformed by milk.

“Rich, intense, sweetly and pungently citrusy. Melon, grapefruit, sandalwood, musk, caramel in aroma and cup. The acidity is round and pungently tart; the mouthfeel smooth and lightly syrupy. Sweet-toned, flavor-saturated finish.
This would be a striking and unusual coffee from anywhere in the world, but it is a particular surprise coming from Hawaii, where sweetness and balance are the positive norm rather than the startling aromatic originality of this Puna peaberry.”

Kazumura Peaberry is a single-origin peaberry from our lush, forested estate in upper Puna. Rooted in lava rock, our coffee trees produce an exceptional peaberry crop with similar yet incredible & intensified characteristics to our Puna Kazumura estate crop. This coffee is roasted to a medium, though slightly darker than our PK estate, to showcase the sweet, syrupy notes of this peaberry coffee.
