Rich and smooth with a dark chocolate finish. This coffee is grown in the Sierra Madre Mountains of Southern Mexico in the Chiapas region. It is grown by a cooperative group of farmers who work together as the Unión de Ejidos Profesor Otilio Montaño, or UDEPOM, for short. Ninety-nine percent of the Union members are native Mayan, indigenous from Mache, Tzotzi, Tojolaba, Jaleco and Tzeltal origins. The coffee is grown at between 4,800 and 5,400 feet in altitude and is comprised of family farms between one and ten acres. Each worker in the Union is paid on a work-share basis, rather than by farm yield. 

An interesting word of note is that this coffee has the smallest carbon footprint of all of our decaffeinated coffees. It is both grown and decaffeinated in the mountains of Mexico. All of our other decaffeinated coffees that hail from farms outside of Mexico must make a stop here at the best decaffeination facility in the the world prior to being shipped to our Roastery in the Berkshires. 

The Royal Select Water Process removes caffeine from the coffee bean without the use of harmful chemicals or byproducts. We are big proponents of this process because it quite seamlessly removes the caffeine and leaves all of the great coffee flavor. 

Our Organic coffees are certified organic at origin by the National Organic Program (NOP). The United States Department of Agriculture (USDA) certifies our Roastery to process 100% Certified Organic coffee through Baystate Organic Certifiers (Winchendon, MA). We ardently support organic agriculture and farming without the use of pesticides, herbicides or synthetic fertilizers.

Our French Roast is smooth, rich and seductive with a dark chocolate finish. We have purchased this coffee direct from the Vargas family farm through the Coffee Source since 1996. Don Rodrigo Vargas represents the fourth generation from the Vargas family to produce coffee at Doka and he currently oversees all of the Doka production. 

The farm is located from 4,430-4,790 feet in altitude and is right next to the Poas Volcano in Sabanilla de Alajuela. The Poas Volcano is the largest volcanic crater in the world. This coffee has won our hearts for many years. In addition, it has been recognized at the Sinter Café Cupping Competition as the First Place Winner in 2000. 

This coffee is a part of the Barrington Green Seal Program which preserves the vibrancy of the green coffee by storing it in an hermetically sealed environment before roasting.

Light and refreshing. Notes of pineapple, mango, blueberries, champagne grape, malted milk & cocoa powder. 

This impeccable Suke Quto microlot grows in the Guji Zone, the Southern part of the Oromia Region that borders the Sidama and Gedeo Zones. The volcanic soil on the farm is highly nutrient. Generally, the soil is fertile, friable, and loamy with the depth of at least 2 meter. One outstanding characteristic of the soil is that its fertility is maintained by organic recycling through litter fall, root residue from perennial coffee and shade trees. 

For processing the coffee they use an Agared machine to pulp the coffee without removing the mucilage. Then they ferment the coffee in tanks between 35-48 hours, depending on the climate. There are 3 treatment tanks for the waste water. Coffee in parchment is dried on elevated beds between 9 and 15 days. 

The Suke Quto farm also has a nursery with coffee seedlings to provide the farm but also the outgrowers in the area. There are 9 permanent employees and about 250 seasonal workers. Suke Quto also buys from about 70 outgrowers. Each of them has about 7ha of coffee trees planted. Other crops that they grow are false banana and fruits.

This lot from our partners at Cenfrocafe marks a new phase in one of our oldest relationships. Cenfrocafe was founded in 1999 with 220 small-scale coffee farmers in 11 community-based organizations. Today it serves 2,000 farmers in 52 organizations. As the cooperative has grown, our direct contact with individual growers has diminished. This lot is the result of a new initiative that seeks to change that. Working with Cenfrocafe, we’ve arranged a direct relationship with the farmers surrounding a single village, Huabal–an arrangement that provides us with more consistent coffees and an avenue to work directly with the same growers year in and year out. On the whole, the village produces around three containers of coffee a year; we’re buying a third of that. Like all of Cenfrocafe’s coffees, this lot’s been sorted and separated meticulously. Huabal boasts some of the highest altitudes within Cenfrocafe with some areas situated above 1,900 meters. We’re pleased as punch with this release from the Huabal growers: plumy and rounded with notes of dark cherry and citrus.

We believe the essence of coffee comes from tension; tension between the hardness of the bean and the heat of the roaster, between the pressure of water in the machine and the dense pack of the fine grind. Reward is finer when earned, and coffee is sweeter when challenged. This is the core of our coffee philosophy.

A coffee house should be a neighborhood center. It should be equally a place to relax as a place to plan a revolution. The Boston Tea Party, the storming of the Bastille, and the Russian revolution were all planned at coffee houses. A coffee house should be a showcase for artists, a forum for ideas, and a catalyst for conversation. It should be a place to meet and to reflect, to pause before, in the midst, or at the end of the day. Metropolis will truly be a coffee house when you have more to say about what goes on here than we do. The name Metropolis comes from Plato's notion of Polis, or city-state. A Polis is complete and sufficient unto itself. Community and the regard for differences among people and their ideas are central to our coffee philosophy. Each bean and tea leaf is sourced with two groups of people in mind: the people that taste them, and the farmers that grow them. Coffee, like art, has an aesthetic.

Our coffee aesthetic is rooted in the belief that great coffee comes from a line of respect beginning with the farmers and their respect for their land. We, in turn, respect the farmers by paying fair prices for their harvest, and respect our customers by taking great care in the roasting and brewing our coffees, and in blending our teas. Respect is at the core of our coffee philosophy, and taste is paramount.

This new offerring from Brazil comes from the Santa Lucia farm in the Carmo de Minas Estate. The beans are processed as a natural pulp where the coffee cherries are left on the tree and will begin to dry, like a raisin and then be dried on the patios. It makes a great pour over brew and shines in the espresso machine.  Notes of sweet honey roasted peanuts, vibrant lemon acidity and a soft creamy mouthfeel.

Importer Notes:
83 out of 740 hectares of this farm are in Coffee. 9 in Yellow Bourbon, 18 in Catuai, 18 in Acaia and 25 in Mundo Novo.  Current production is about 2800 bags, of which; 1260 are Pulped Natural and 1540 are Natural.  This farm is a model of the region and is inovating in both quality and proper production methods with hopes of producing 4500 bags in the future.

The story of Las Nubes goes way back to 1920 when the land was purchased by Isidro Batlle & has continued on with his family farming the land since. This past year the family split the land into different tablones or lots & designated them by their altitude. These bourbon coffees were then processed by being fully washed & then sun dried.
